Unique wine
& dining experiences at Ottawa's newest restaurant featuring
premium wines & new flavours for each season

Ottawa and The Savvy Grapes proudly announce an all Canadian wine and
dining experience at Novotel Ottawa’s new TRIO
Restaurant.
Created in Ottawa for Novotel Canada, TRIO
Restaurant will showcase a ‘sharing plates’ menu designed by Novotel's
award
winning Executive Chef Scott Lucas.
This new menu will feature locally grown
produce paired with an all Canadian wine list
developed by the Accredited Sommeliers of The Savvy Grapes. The sharing plates along with TRIO's
classic menu will change each season in conjunction with the unique wine and dining
event.
Announcing
the Savvy Supper Series…
Special wine and dining events will be hosted at Novotel’s TRIO
Restaurant. The Savvy Grapes
invite you to the FIRST ‘Savvy
Supper Series’ showcasing Canadian winemakers and their
premium wines. At each event, you will meet and mingle with the people
devoted to making premium wines. During
supper, they will share stories and secrets about their winery, winemaking
techniques, and their vineyard.
Wines will be paired with a new gourmet tasting menu
that includes a series of tasting plates featuring items from TRIO’s
menu that changes with each season. During the evening, the featured
winemaker, TRIO’s Executive Chef and Sommeliers from The
Savvy Grapes will visit your table to answer any wine and food
questions.

Thursday
April 24th – Featherstone Estates Winery
 Husband
and wife team David Johnson and Louise Engel are ‘foodies’ with a
passion for wine. Nine years ago they moved to Niagara, purchased a 23
acre property that is the site of their home, Featherstone
Estate Winery and vineyard. David
spent the winter of 2007 in New Zealand working at Selini
Winery in Hawkes Bay during the grape harvest learning new winemaking
techniques that he continues to apply at his own winery. MENU

June 19th – Huff Estates Winery
 Huff
Estates'
winemaker Frederic Picard left Burgundy, France to move to Niagara where
he worked as assistant winemaker at Peninsula Ridge Winery.
After visiting Prince Edward County (even though it was in
February), he fell in love with the region and decided to join Huff
Estates. His french
influences are evident through the use of french oak barrels and classic
dry Rosé
wine. Huff Estates recently released Prince Edward County’s first
sparkling wine and it received rave reviews in a competition in Champagne,
France.

Colio Estate Wines
 Colio
Estate Wines is a pioneer in the Canadian wine
industry as they were the first winery established in the
Lake Erie
North
Shore
wine region in 1980. Winemaker Carlo Negri, was lured away from an Italian winery to help break ground.
Twenty plus years later, he
continues to make an impression with his wines, winning notable awards including most recently
‘Winemaker of the Year 2005’. Over supper, Carlo will share
exciting news about Colio’s second winery slated to open in
Niagara
in 2009.
