Watermelon
& Black Olive Salad
with Wine

Serves many!
This
salad has unique flavours while being refreshing. It is great to
make ahead & serve with a BBQ or for The Savvy Grapes team
summer party, we modified the recipe from a salad to skewers of marinated
watermelon, grilled chicken & olives.
The
Savvy Grapes wine
suggestions:
Salads
can be difficult to pair with wine as the vinaigrette can make the wine
taste...vinegary! With this recipe, a chilled dry Rose wine, a sparkling
wine or a crisp wine such as Pinot Gris or Pinot Grigio.
Some specific wines to try:

Pinot Gris from Argentina $11 at LCBO

Margherita Pinot Grigio from Italy, LCBO Vintages $16
To
complement the spices in this salad, a Gewurztraminer would be a good
choice. Try:
-
Fetzer
Gewurztraminer, California $14 at LCBO
-
Pierre
Sparr Gewurztraminer, Alsace France $16 at LCBO

4 cups seedless watermelon cut in ½ inch cubes
1/3 cup chopped black olives
1/3 cup chopped green onions
crumbled feta cheese (optional)
Place all ingredients in a large salad bowl & set
aside.
For Vinaigrette
1 Tablespoon garam marsala (An East Indian spice mixture that generally
includes coriander seed, black pepper, cumin, cardamom, tumeric, nutmeg,
cloves & cinnamon. Purchase
a package of this spice mixture at an Indian grocery or health food
store).
1 teaspoon sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
2 Tablespoons rice vinegar
¼ cup olive oil
Mix together all ingredients for vinaigrette.
Gently mix in vinaigrette to cover watermelon.
Chill until ready to serve.
OUR
NOTE: This can be enjoyed as a side salad or thread watermelon
cubes on a skewer with black olives and pour vinaigrette over top and
serve as a kebab. Refreshing
with a crunch and a zing!
