While visiting Niagara this past summer, Charlie Pillitteri of Pillitteri Estates Wines invited the The Savvy Grapes Sommeliers to a backyard BBQ where he served steaks using this unique dry rub. The coffee beans caramelized while BBQing, offering a rich earthy flavour that will be enhanced with this robust wine. This recipe can be doubled and stored in a jar or Ziploc container in the fridge. Pillitteri Estates Wines was featured in the Savvy Selections wine of the month club. In a bowl add ground mixture
with Montreal Steak spice. 3.
Sprinkle mixture over steaks.
Gently rub into the surface of the meat, patting down to secure the
coffee bean mixture in place 4.
Flip steaks over and repeat on
other side 5.
Cover steaks and place in fridge
until BBQ is ready (The steaks can ‘marinade’ for a couple of hours or
simply a few minutes) 6.
BBQ steaks to your liking.
