Chilled
Sparkling Cantaloupe Soup
with Wine

Serves 6
This
is a simple no-cook recipe that will impress any guests. The soup
can be made ahead & chilled until all of your guests have gathered
around the picnic table. Be sure to put the serving bowls in the fridge or
freezer to frost them before you serve for maximum impact.
The

This
recipe is so light and refreshing, we think that a sparkling wine is the
perfect match. Some specific ones to try (and can be used in the
recipe too):

Vino Dei Poeti Prosecco from Italy, LCBO $13

1 large cantaloupe, peeled, seeds removed and roughly
chopped
½ cup of orange juice concentrate, frozen
1 cup sparkling wine, chilled
Fresh mint for garnish
Place serving bowls in freezer to frost.
In a blender (or food processor), puree cantaloupe &
orange juice until smooth.
Chill until ready to serve.
Just before serving, pour soup into a jug.
Fill only half full. Gently
pour in sparkling wine (watch out that it will froth).
Stir to combine.
Serve in frosted bowls with mint garnish.
