Crusted Beef Fillet with Blue Cheese & Walnuts

Serves 6

The Savvy Grapes wine suggestions:
This dish is certainly prime for a red wine. Select a flavourful wine made with one or more grape varieties including:

  • Cabernet Sauvignon

  • Red Zinfandel (from California)

  • Syrah or Shiraz

  • Merlot

  • Carmenère (from Chile)

4 tablespoons vegetable oil
6 , 6 oz. beef fillets (or roast of beef)
salt and pepper
6 oz. blue cheese
1 1/2 shallots, minced
3/4 cups walnuts, toasted and chopped
1 cup breadcrumbs
1/4 cup white wine
1/2 teaspoon chopped fresh thyme
1 1/2 shallots, minced

 

Preheat oven to 375 F.

To prepare beef, heat oil in a fry pan over medium-high heat. Season beef and sear evenly on both sides. Place beef on a baking sheet or roasting pan.

Combine remaining ingredients in a bowl to make a crust. Add a sprinkle of water, if needed, to bind everything together. Using your hands, scoop up crust, pack it slightly and place an equal amount on top of each fillet.

Roast fillets in oven for 20 minutes, until medium rare; internal temperature of 130 F.

Let rest 5 minutes before serving.
