Firecracker Shrimp with Mango Avocado Dip
Serves 4

This was served at a cocktail party and The Savvy Grapes Accredited Sommelier Debbie Trenholm, still raves on about this appetizer. "After the first bite, I definitely wanted to get this recipe!" she remembers  

Wine Suggestion:
A Viognier - The exotic ingredients playfully complement the intense aromas & flavours of a medium bodied Viognier white wine.  Try with the Peninsula Ridge Viognier which is one of the few wines in Ontario made with this 'up and coming' grape variety.  

This particular wine was a wine featured in the Savvy Selections wine of the month club.  It is only available from the winery.  To order, contact The Savvy Grapes...it is a absolutely delicious white wine!  





Firecracker Shrimp
Shrimp (the bigger the better!), de-veined
Freshly ground black pepper 
Sesame oil
Sambal oolek  (Thai/Vietnamese chilli paste)
Salt
White sugar

Mango Avocado Dip
1 ripe mango, peeled and roughly chopped
1 ripe avocado, peeled and roughly chopped
1 jalapeno pepper, seeded and roughly chopped
2 tablespoons of vegetable oil
3 tablespoons of freshly grated ginger
1-2 tablespoons of liquid honey
Juice of 3-4 limes

1 teaspoon salt


For the Shrimp:

  1. Quickly cook shrimp in boiling water
  2. Cool under running water and remove shells. 
  3. In a separate bowl, combine sesame oil, pepper, salt, a sprinkle of white sugar and sambal oolek.
  4. Pour over peeled shrimp and toss
  5. Taste and adjust seasoning.
Arrange on a platter with Mango Avocado Dip

Mango Avocado Dip
1.     
In food processor combine grated ginger (or chop knob of peeled ginger root in food processor first), mango, jalapeno, honey, avocado and lime juice. 

2.      Add vegetable oil and salt. 

3.      Taste and adjust seasonings. Try to achieve a balance of ginger, acid (lime) and sweetness.
