Curried Chicken with Fruit

Serves 16 (perfect for a dinner party)

This unique recipe would pair well with a flavourful white or rosé wine. A winery that has both is Huff Estates Winery located in Prince Edward County.  This is Canada's newest grape growing region and the handful of established wineries are making impressive wines.  

For this dish, we recommend:

  • Huff's Off Dry Riesling

  • Huff's First Frost (unique white wine made with Vidal grapes)

20 dried apricots
2 cups water
1 cup raisins
1 can (10 oz/284 ml) chicken broth or homemade stock
½ cup dry white wine
1 can (14 oz/398 ml) unsweetened pineapple (canned)
1 can (10 oz/284 ml) mandarin oranges (canned)
Juice from all canned fruits, including apricots (instructions below)
½ cup butter, divided
5 TBSP flour
3 TBSP powdered chicken stock
1-2 tsp curry powder
salt & pepper to taste
2.5 lbs chicken breasts, skinned & boned
1 cup seedless green grapes
2 medium avocados

1 cup wide flake coconut


Simmer apricots in water until tender, about ½ hr.  add raisins the last 5 minutes of cooking time to plump.   Combine juices from all fruits, including apricots, with chicken broth and wine; set aside.  

In food processor or blender, puree 8 apricots, 1 cup (250 ml) pineapple, ¼ cup (50 ml) mandarins and ¼ cup (50 ml) raisins.

Melt 5 TBSP (75 ml) butter in large heavy sauce pan.  Stir in flour and cook gently for 3-4 mins.  

Combine the reserved liquids, fruit puree and powdered chicken stock; add to butter mixture, whisking quickly.  Cook until smooth and thick.  Add curry and season with salt and pepper.  

Meanwhile, cut chicken into walnut-sized pieces and sauté in remaining butter just until cooked.  Fold chicken grapes, remaining apricots, pineapple, raisins and mandarins into thickened puree.  At this point, curry may be refrigerated or frozen.  

Reheat gently just before serving and transfer into a large, shallow serving dish or casserole.   Garnish with avocadoes and coconut.  

NOTE: this is a great dish to make for a dinner party as you can make it all ahead.
